Heart Healthy Creamy Carrot Soup

Ingredients
  • 1 pound carrots
  • 1 onion (medium)
  • ½ red bell pepper
  • 1 potato
  • 1 tablespoon grated ginger
  • 1 tablespoon olive oil
  • 1 teaspoon coriander (optional)
  • ½ teaspoon turmeric (optional)
  • 4 cups of water
  • Salt to taste
Instructions
  1. In a medium saucepan heat the olive oil. Chop the onion and saute for 3 minutes until the onion becomes shinny.
  2. Sprinkle ginger, coriander and turmeric and saute for another 1 minute.
  3. Peel the carrots and potatoes and chop them in 2 inch pieces. Seed the red bell pepper and cut it in 1 inch cubes.
  4. Once the onion and spices are sauteed add the carrots, potatoes and bell pepper, mix them well and then add the water.
  5. Season with salt and let the mixture boil until all the vegetables are cooked, approximately 20 minutes.
  6. Remove from the heat and let the soup cool for 10 minutes.
  7. Transfer the veggies and liquid into a blender and blend on high for about 2 minutes until the soup has a “smoothie” consistency. Depending on your blender you can do this step in batches.
  8. Add croutons, or for a healthier option, sprinkle a few coconut flakes on top and serve warm.
